Hawaiians call this cut mahi-mahi meaning “strong-strong”.   Some call it dolphin fish, though it’s not related to the mammal.  And we just call it good!   Mahi-mahi is a mild, white, flaky, sweet tasting fish commonly found in high end restaurants in Hawaii but now also available right here at Legal Sea Foods.

 

 

 

Mahi-mahi’s scientific name is Coryphaena Hippurus. Mahi is a very colorful fish with an iridescent blue-green and gold body, and golden yellow fins. This also explains why it’s sometimes called dorado or ‘golden’.  A distinctive forked tail enables this big fish to swim very fast. The mahi population is thought to be abundant due to the species’ very fast growth and high birth rate. As many as a quarter of a million eggs are laid by a single female fish!   

 

 

 

While eating a diet of small fish, shrimp, squid and crab, a young mahi can grow as much as 10% of its body weight per day, and can reach a size of 5 feet and weight of 70 pounds. One distinguishing characteristic between males and females is the head, the male having a more rounded form while the female’s slopes down toward the mouth.

 

 

 

Mahi is a nutritious choice as well as a delicious one.   A four-ounce filet portion of mahi-mahi yields only 100 calories while offering these healthy measurements: 18.5 grams of protein, 1 gram total fat, 15 mg calcium, 1.3 grams iron, 143 mg phosphorus, 416 mg potassium, 88 mg sodium, and 180 IU vitamin A.   Besides being good for you, it’s an easy fin fish to prepare, as it’s adaptable to almost any cooking method including poaching, broiling, baking, frying, sautéing, and grilling. 

 

 

 

Mahi is a migratory fish found in tropical and subtropical regions. They are prevalent from April though August in the Gulf of Mexico, from November though March in Central and South America , and from March through May and again September through November in their native Hawaiian waters.

Ingredients:
1 C yellow pear tomatoes, halves
1 C diced roasted red pepper
2 Can cannellini beans
1/2 C sliced chives, 1/2"
 
Preparation Method:
 
Step 1. Mix all ingredients together.
 
Chimi Churri
Ingredients:
1 C italian parsley
1  bunch of chives
1/2 C Olive Oil
1 Cup champagne vinegar
2 small shallots
 
Preparation Method:
 
Step 1. Puree all ingredients in a food processor. Taste and season with salt and pepper.
 

Mahi Mahi

Ingredients:

 
4          8 oz pieces of Mahi Mahi
4 C      white bean stew
4 oz     chimi churri
 
Preparation Method:
Step 1. Brush mahi mahi with olive oil, season with salt and pepper and grill on both sides until cooked through.
Step 2. Heat white bean stew in a sauce pan on the stove.
Step 3. Remove fish from grill and split into two pieces along the natrual separation.
Step 4. Place one cup of white bean stew in the center of each dinner plate and stack fish on top of beans.
Step 5. Ladle sauce over the top of fish.
