More Restaurant Chains to Cut Trans Fats

More U.S. food chains are cutting artery-clogging trans fats from their items. Quiznos, Jason's Deli and Fazoli's are among those who plan similar steps like Legal Sea Foods, Ruby Tuesday and Au Bon Pain in cutting trans fats, USA Today reported Wednesday.

 

"It's a flood compared to what it was," said Stephen Joseph with BanTransFats.com, a consumer group urging food makers and sellers to dump trans fats

 

The government in about nine months will begin requiring food makers to list trans fats on food labels.

 

Restaurants are exempt from that requirement. But nutritionist and author Cynthia Lair says more restaurants will likely follow because eliminating trans fats could give them a marketing edge.

Trans fats, found mostly in vegetable oils, shortening and some margarine, result when food manufacturers process oil for shelf life and flavor stability.
