

Quality began at Legal more than 60 years ago, but it’s a concept that never gets stale. Since we specialize in seafood, we’re already serving the healthiest of all proteins. Our stringent quality control program makes certain that we offer only the very best seafood. So not only do we take pains to buy only the freshest fish possible, but then we test it to ensure its safety. We prefer buying product from day boat operators – fisherman who go to sea for just a single sweep before bringing their catch to shore. Otherwise, we buy fish that is “top of catch” or hauled on board boats just before landing. This practice is costly, but we think it’s worth it to obtain fish that’s supremely fresh. Every lot of fish and shellfish we buy is then quarantined and tested by a team of microbiologists and laboratory technicians in our processing facility and it’s not released unless it meets our demanding criteria. While other purveyors may worry about cyclical concerns such as mercury or Red Tide, we operate every day as if we were in the public health business. Now you know what we mean when we say, “If it isn’t Fresh, it isn’t Legal!”
