Legal Sea Foods Partnering With Privateer Rum On Specialty Daiquiri

Boston-based Legal Sea Foods has teamed up with another local brand, Privateer Rum, to create a special drink that would pair with the restaurant chain’s oysters. The companies created the Privateer Hemingway Daiquiri for Legal Sea Foods’ annual Oyster Festival in October. 

 

Legal’s director of beverage Christian Giannaris wanted to pair the oysters with something that would provide diners with the essence of New England. He was particularly intrigued by Privateer Rum’s distilling process and location.

While most rum distilleries are situated in the tropical climates of the Caribbean or the West Indies, Privateer Rum crafts their spirits in Ipswich, MA. The region’s maritime climate offers hot, humid summers, and cold, dry winters, which promotes slow and steady molecular activity and creates new and more complex flavors through positive evaporation, oxidation and esterification.

The Privateer Hemingway Daiquiri (recipe below) will still be available at Legal Sea Foods’ 23 restaurants after the Oysterfest ends. Legal Sea Foods, acquired by Smith & Wollensky parent PPX Hospitality Brands in 2020, plans to open a location in Chicago this winter.

Privateer Hemingway Daiquiri

Ingredients:

2 oz. Privateer New England Reserve rum
¼ oz. Luxardo Maraschino liqueur
½ oz. Simple syrup
½ oz. Natalie’s grapefruit juice
½ oz. Natalie’s lime juice

Instructions:

Combine all ingredients in a shaker.
Add ice, and hard shake for 10-15 seconds.
Strain into a double Old Fashioned glass over fresh ice.
Garnish with an expressed grapefruit swath.
